Fermentation Process

The natural fermentation process begins. During this phase, the oleuropein compound in the olives is broken down, removing their bitterness. This process makes the olives flavorful and ready for consumption.

Packaging Preparation

Once fermentation is complete, the olives are prepared for packaging according to the desired format. Hygiene standards are carefully maintained to ensure the products are ready for distribution.

Harvest and Cleaning

Olives are carefully harvested from the trees, sorted by size, and thoroughly cleaned. This step ensures a healthy start to the fermentation process.

Pressing and Resting

The cleaned olives are placed into suitable containers and subjected to pressing. They are then rested in brine to prepare them for fermentation.
